2 lbs. pork for carnitas, cut into 2 inch cubes

2 cups large sweet onion, diced

2 Tbsp minced garlic

2 tablespoons oil

2.5 cups beef broth

2 cans (15-1/2 ounces each) golden hominy, drained

2 cans (4 ounces each) chopped green chilies

1 large can, (28 ounces) diced tomatoes, drained

1/4 cup chopped fresh cilantro

1/2 teaspoon salt

1/2 teaspoon ground cumin

1/2 teaspoon dried oregano

1/4 teaspoon pepper

1/4 teaspoon cayenne pepper

1/2 cup minced fresh cilantro

In a large crockpot the night before the big game,  cook all of the ingredients on low to medium heat for 6 to 8 hours until the meat is fork tender and onions are soft. Go Steelers!
