I made this a few weeks ago to sit on the couch and watch a movie with a yummy bowl of soup that didn’t eat like a can of baseball nacho cheese. This soup was light, cheesy with that tang of a great beer and the kielbasa, while it may sound like it’s going to make it heavy, actually just makes the dish have another level of flavor. I even suggest getting the Eckrich or Hillshire Farm “lite” sausage to make the calories slightly less.
Either way, delicious, amazing and I keep thinking if I can ever find an amazing combination of football watcher who can have manners and eat at a formal dining room table, that this would be my starter. A girl can dream, right?

This rich and cheesy broth is satisfying on its own, but goes main course with the addition of seared kielbasa sausage.
